Preparation
  1. Start by peeling and chopping the sweet potatoes. Place them in a large pot of boiling water and cook for about 20 minutes, or until tender. Drain and let cool slightly before mashing.
  2. In a large mixing bowl, combine the mashed sweet potatoes with the unsalted butter, brown sugar, granulated sugar, milk, eggs, vanilla extract, cinnamon, and nutmeg. Stir until everything is well blended and creamy.
  3. Preheat your oven to 350°F (175°C). Pour the sweet potato mixture into a greased baking dish. Bake for 25 minutes, or until heated through and set.
  4. Remove from the oven and evenly sprinkle the mini marshmallows on top. Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown and toasty.
