  • 1 lb Italian sausage adds a hearty flavor
  • 1 medium Onion sautéed for sweetness
  • 3 cloves Garlic minced for depth
  • 1 can Diced tomatoes adds acidity
  • 4 cups Chicken broth low-sodium recommended
  • 2 teaspoon Italian seasoning
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
For the Creamy Finish
  • 1 cup Heavy cream for richness
  • 9 oz Cheese tortellini tender filled pasta
  • 2 cups Fresh spinach adds nutrients

Method
 

Directions
  1. In a skillet over medium heat, brown the Italian sausage until it's nicely caramelized, about 5-7 minutes. Drain the excess fat.
  2. Transfer the browned sausage into your slow cooker. Add the diced onion, minced garlic, diced tomatoes, chicken broth, and Italian seasoning, stirring well to combine.
  3. Set your slow cooker on LOW for 5-6 hours or HIGH for 2-3 hours.
  4. During the last 15-20 minutes of cooking, gently stir in the heavy cream and cheese tortellini.
  5. Toss in the fresh spinach and let it wilt for about 5 minutes before serving.
  6. Taste and adjust with salt and pepper if needed. Serve hot.
