- In a skillet over medium heat, brown the Italian sausage until it's nicely caramelized, about 5-7 minutes. Drain the excess fat.
- Transfer the browned sausage into your slow cooker. Add the diced onion, minced garlic, diced tomatoes, chicken broth, and Italian seasoning, stirring well to combine.
- Set your slow cooker on LOW for 5-6 hours or HIGH for 2-3 hours.
- During the last 15-20 minutes of cooking, gently stir in the heavy cream and cheese tortellini.
- Toss in the fresh spinach and let it wilt for about 5 minutes before serving.
- Taste and adjust with salt and pepper if needed. Serve hot.
