Potato Layers
  • 4 cups sliced potatoes (russet and Yukon gold)
  • 2 cups diced cooked ham
Cheese Sauce
  • 2 cups shredded cheddar cheese sharp cheddar recommended
  • 4 tablespoons butter unsalted preferred
  • ¼ cup all-purpose flour
  • 2 cups milk whole milk for creaminess
Flavoring
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder optional
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
Garnish
  • ¼ cup chopped fresh parsley

Method
 

Preparation
  1. Melt butter in a saucepan over medium heat. Stir in flour and cook for 1-2 minutes until lightly golden.
  2. Whisk in milk gradually along with garlic powder, onion powder (if using), salt, and pepper. Continue cooking for about 3-5 minutes, or until the mixture is thick and bubbly.
  3. Spray your crock pot with non-stick cooking spray. Layer half of the sliced potatoes, then half of the diced ham, and sprinkle with ¾ cup of shredded cheese.
  4. Repeat with the remaining potatoes, ham, and cheese.
  5. Pour the cheese sauce evenly over all the layers. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and creamy.
  6. Sprinkle with fresh parsley before serving.
