How to Make Birria Enchiladas
- Preheat your oven to 375°F (190°C).

- Dip the corn tortillas briefly in the warm birria sauce.

- Fill each tortilla with a generous amount of shredded birria beef and a sprinkle of cheese, then roll them up tightly.

- Arrange the rolled tortillas in a baking dish, placing them seam-side down. Cover with remaining birria sauce.

- Top with remaining cheese and cover the dish. Bake for 20 minutes.

- Uncover and continue baking until cheese is fully melted and bubbly, around another 10-15 minutes.

- Garnish with finely diced onion and fresh cilantro before serving.
