- 1. In a medium bowl or large jar, add the rolled oats, chia seeds, mashed banana, milk, Greek yogurt, maple syrup, vanilla, cinnamon, and salt.
- 2. Stir very well until the banana is evenly mixed in and the chia seeds are not clumped together. The mixture should look loose at first and thicken as it rests.
- 3. Stir in the chopped walnuts, or save them for topping later if you want them to stay crunchier.
- 4. Cover and refrigerate for at least 4 hours, but overnight is best for the creamiest texture.
- 5. The next morning, stir the oats again. If they seem too thick, add a splash of milk until the texture is creamy and spoonable.
- 6. Divide into jars or bowls and top with banana slices, more walnuts, a drizzle of maple syrup, or nut butter if desired.
Notes
This recipe is great for busy days as it can be prepared in advance and stored in the fridge.
