  • 1 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 medium ripe banana, mashed
  • ¾ cup milk of choice
  • ½ cup plain Greek yogurt
  • 1 to 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • pinch of fine salt
  • 2 tablespoons chopped walnuts
Optional toppings
  • banana slices
  • extra chopped walnuts
  • drizzle of maple syrup
  • spoonful of almond butter or peanut butter
  • sprinkle of cinnamon

Method
 

Instructions
  1. 1. In a medium bowl or large jar, add the rolled oats, chia seeds, mashed banana, milk, Greek yogurt, maple syrup, vanilla, cinnamon, and salt.
  2. 2. Stir very well until the banana is evenly mixed in and the chia seeds are not clumped together. The mixture should look loose at first and thicken as it rests.
  3. 3. Stir in the chopped walnuts, or save them for topping later if you want them to stay crunchier.
  4. 4. Cover and refrigerate for at least 4 hours, but overnight is best for the creamiest texture.
  5. 5. The next morning, stir the oats again. If they seem too thick, add a splash of milk until the texture is creamy and spoonable.
  6. 6. Divide into jars or bowls and top with banana slices, more walnuts, a drizzle of maple syrup, or nut butter if desired.

Notes

This recipe is great for busy days as it can be prepared in advance and stored in the fridge.
